THIS RASPBERRY ICEBOX CAKE IS PERFECT FOR HOT DAYS & NIGHTS

“What a lovely refreshing dessert for those hot summer days.”

Ingredients

  • 24 graham crackers, crushed
  • 1/3 cup butter
  • 1/4 cup packed brown sugar
  • 1 (6 ounce) package raspberry flavored Jell-O(R) mix
  • 1 cup boiling water
  • 15 ounces frozen raspberries
  • 20 large marshmallows
  • 1/3 cup milk
  • 1 cup heavy whipping cream, whipped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix graham cracker wafer crumbs, butter and brown sugar until well combined. Set aside 1/4 cup of this mixture for a topping and press the remainder into one 9×13 inch pan.
  3. Bake at 350 degrees F (175 degrees C) for 10 minutes. Set aside to cool.
  4. Dissolve raspberry gelatin in the boiling water and add the frozen raspberries, stirring until melted. Chill until partially set and spread on wafer base.
  5. Melt marshmallows with the milk. When cool, fold in whipped cream and spread on top of raspberry mixture. Sprinkle with remaining crumbs. Chill for 3-4 hours before serving.

CREAMY CHICKEN & RICE CASSEROLE

This nostalgic dish is reminiscent of the old school casseroles your grandmother used to make, but in easy mode to make it fast, delicious, and perfect for a weekday night. Roasted chicken and pre-cooked rice (or leftover rice) are combined with easy-to-prepare vegetables cooked in a thick flour broth with a little sour cream added for smoothness.


Ingredients : 

  • 1 box Chicken-flavor Rice-A-Roni (6 Ounce Box)
  • 1 can Cream Of Mushroom Soup (10 Ounce Can)
  • 1 container Sour Cream (8 Ounce Size)
  • 1 whole Rotisserie Chicken
  • 1 container French-fried Onions (6 Ounce Can)


HOW TO MAKE IT  :

  1. Preheat oven to 350 F. Prepare Rice-A-Roni according to package directions. While that is cooking, shred/cut up the chicken (I always use a rotisserie chicken, but you could use leftover chicken or some cooked and shredded breasts, whatever), removing meat from bones.
  2. When Rice-A-Roni is done, add the can of soup and the sour cream, and stir to combine. Add the chicken and mix together. Spread mixture into a sprayed baking dish (9-by-13-inch pan), but you can use what you like for how thick you want it to be) and bake, uncovered, at 350 F for 40 minutes.
  3. Remove from oven, cover with the french-friend onions and bake for 5 more minutes. Remove from oven and try not to eat the whole thing.

Homemade Pancakes

Quick and easy recipe for homemade pancakes perfect for any weekend (or weekday) morning!


INGREDIENTS

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoons sea salt
  • 2 tablespoons cane sugar
  • 1 teaspoon vanilla extract
  • 2 organic large eggs
  • 2 cups oat milk
  • 1 tablespoon melted coconut oil
  • 4 tablespoons grass fed melted butter


Intructions :

  1. Mix all ingredients in a bowl. Add more milk, for thinner pancakes. 
  2. Heat a large skillet, preferably cast iron, nonstick or a griddle over medium heat. Add about 1 tsp of oil to pan. 
  3. Use ladle to spoon batter onto skillet. You should be able to fit 2-3 spoonfuls in skillet.
  4. When pancake surface bubbles (usually 60-90 seconds), flip pancake using a thin wide spatula. Cook other side until evenly browned (usually 60 seconds).
  5. Continue adding oil and batter until all pancakes are done.
  6. Heat oven to 200 degrees to keep pancakes warm until ready to eat. 
  7. Enjoy toppings such as melted butter, maple syrup, confectioners' sugar, sweetened whipped cream or/and berries or fruit.

Mississippi Mudslide Cake

The Chocolate Cake with Chocolate Ganache, Kahlua Whipped Cream and Oreo is the definition of indulgent baking! Welcome to a jazzed up Mississippi Mud Cake!


Ingredients :

Base :

  • 30 crushed dark chocolate biscuits
  • 120 g unsalted butter, melted and cooled


Brownie Layer :

  • 225 g dark chocolate 70-80% cocoa coarsely chopped
  • 240g unsalted butter
  • 200 g caster sugar
  • 220g brown sugar
  • 1 to 2 pinches of salt
  • 10ml vanilla extract
  • 4 large eggs
  • 125g flour


Chocolate pudding layer :

  • 150 g caster sugar
  • 40g unsweetened cocoa powder
  • 40g flour
  • 1 pinch of salt
  • 2 large egg yolks
  • 500ml whole milk
  • 30 g unsalted butter
  • 20ml vanilla extract


Decoration:

  • 250 ml cold heavy cream


Base :

  1. Preheat the oven to 180°C.
  2. Line & butter 23cm springform pan.
  3. In a large bowl, combine the cookie crumbs and cooled melted butter to butter all the crumbs.
  4. Transferiing to pan & press in an even layer on bottom of pan using a cup.
  5. Put aside.


Brownie Layer:

  1. In a large bowl, melt the chocolate with the butter in a bain-marie. To mix together.
  2. In another large bowl, whisk together the sugar, brown sugar, salt, vanilla and eggs for 1 to 2 minutes until the mixture is frothy and clear.
  3. Pour the melted chocolate mixture into this final preparation and whisk until a homogeneous consistency is obtained. Then fold in the flour evenly.
  4. Pour the batter over the base in the pan and level with a spatula.
  5. Bake for around 40 mins.
  6. Do toothpick test after 35 min


Chocolate pudding layer:

  1. In a bowl, whisk together the sugar, cocoa powder, flour and salt until smooth. Add the egg yolks and a little milk and stir until the mixture forms a thick, smooth paste.
  2. Adding rest milk & whisk to smooth.
  3. Pour into a saucepan and cook over medium heat, 8 to 10 minutes, stirring constantly, until the mixture begins to bubble and thicken.
  4. Removing pan from heat, adding butter & vanilla & stirring to butter is melted and the mixture is smooth.


Assembly :

  1. Pour hot pudding over brownie layer and level top with spatula.
  2. Leave to cool at room temperature for about 1 hour.
  3. Then refrigerate for at least 4 hours.
  4. When ready to serve, whip very cold cream in a medium bowl until stiff peaks form.
  5. Place the pie on a serving platter.
  6. Spread whipped cream on top of pie and sprinkle with cocoa powder.
  7. Serve cold.

To Make this Recipe You’ Will Need the following ingredients:

Ingredients

Strawberries:

  • 2 pints fresh strawberries hulled and cubed
  • ⅓ cup granulated sugar
  • 1 lemon juiced
  • 1 21 oz can strawberry pie filling

Vanilla cheesecake mousse:

  • 2 8 oz cream cheese softened
  • 2 cup powdered sugar divided
  • 4 cup heavy cream divided
  • 1 Tbsp pure vanilla extract
  • 1 angel food or vanilla pound cake cubed

Instructions

  1. Mix together the cubed strawberries with ⅓ cup granulated sugar and 1 juiced lemon. Stir well then set aside to macerate while you make the filling.
  2. Whip together 2 [8] oz softened cream cheese with 1 ½ cup powdered sugar and 1 ½ cup heavy cream. Add 1 Tbsp pure vanilla. Whip for 2-3 minutes until creamy, fluffy and combined. In a separate bowl, whip the remaining 2 ½ cup heavy cream with ½ cup powdered sugar, more if desired. Whip until stiff peaks form.
  3. Fold 2 cup of the whipped sweetened fresh cream into the cheesecake mixture by hand. Reserve the remaining whipped sweetened fresh cream for the top of the trifle.
  4. Add the strawberry pie filling to the macerated strawberries, mix well.
  5. To assemble, alternate layers of cubed cake, strawberries, and vanilla cheesecake mousse. Repeat until all ingredients have been used.
  6. Top with the remaining sweetened fresh whipped cream and garnish as desired. Chill for 3-4 hours prior to serving.
  7. Store leftovers chilled.

 Have you ever tried something so delicious you can barely stand it…and something that you’re even more shocked that you actually made. This is one of those recipes.

French Bread Pizza – the easiest way to make pizza at home, and it’s ready in no time! Made with soft yet hearty French bread, robust, garlicky and herby pizza sauce, two types of rich cheese and all your favorite toppings!

All be honest, going into this with recipe testing I was thinking it would more so be a recipe the kids would love – but it turns out that equally as well adults will absolutely love this French bread pizza too!

But of course that only makes sense because it’s layered with so much goodness and it’s extra cheesyIt has incredible flavor, perfect texture (crisp exterior, soft interior) and it’s so easy to customize (see below for ideas, or just think of your favorite creative pizza and make that here!).

To Make this Recipe You’ Will Need the following ingredients:


Ingredients

  • 1 (14 oz) loaf French bread (about 17-inches long, 4-inches wide*)
  • 1/4 cup olive oil
  • 1 cup (scant) pizza sauce, preferably homemade, or store-bought
  • 1 3/4 cups (7 oz) shredded mozzarella cheese
  • 1/4 cup finely shredded parmesan cheese
  • Desired toppings (see notes for ideas)


Instructions

  1. Move oven rack up one level and preheat oven to 425 degrees. Line a rimmed 18 by 13-inch baking sheet with aluminum foil for easier clean up if desired.
  2. Cut french bread in half evenly through the length, to create two long portions. Cut each portion in half (creating four pieces total) and place them on baking sheet.
  3. Brush both sides with olive oil. Turn upright and bake in preheated oven 4 minutes.
  4. Spread pizza sauce over each piece, sprinkle evenly with mozzarella and parmesan cheeses, then finish with desired toppings.
  5. Bake in preheated oven until cheese is fully melted, about 10- 13 minutes. If you’d like it more browned then broil during the last 1 minute or so (keep a close eye on it!).
  6. Serve warm.
