Ingredients:

  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg


For the Cinnamon Swirl:

  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp melted butter


Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking and ensure easy removal of the bread.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. This will help evenly distribute the leavening agents and spices throughout the bread.
  3. In another bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Stir in the grated zucchini, making sure it’s well incorporated into the mixture.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix, as this can lead to a dense loaf.
  5. Pour half of the batter into the prepared loaf pan. In a small bowl, mix the cinnamon swirl ingredients—brown sugar, ground cinnamon, and melted butter. Spread this mixture over the batter, then top with the remaining batter.
