- 2 cups grated zucchini
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
For the Cinnamon Swirl:
- 1/4 cup brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp melted butter
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking and ensure easy removal of the bread.
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. This will help evenly distribute the leavening agents and spices throughout the bread.
- In another bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Stir in the grated zucchini, making sure it’s well incorporated into the mixture.
