Baked Fried Chicken

Ingredients:
- 6 boneless, skinless chicken breasts, cut into thirds
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon seasoned salt (such as Lawry's)
- 3/4 teaspoon black pepper
- 2 teaspoons paprika
- 1/4 cup (1/2 stick) butter
- Buttermilk
Instructions:
- Place the chicken strips in a bowl of buttermilk. Cover and refrigerate for 20–30 minutes.
- Preheat the oven to 400°F (200°C).
- In a large resealable plastic bag or mixing bowl, combine the flour, salt, seasoned salt, pepper, and paprika. Mix thoroughly.
- Cut the butter into pieces and place in a 9x13-inch baking pan. Put the pan in the oven to melt the butter.
- Once melted, spread the butter evenly across the bottom of the pan. Lightly spray with cooking spray if needed to prevent dry spots.
- Remove the chicken from the buttermilk, letting the excess drip off. Coat each piece thoroughly in the flour mixture.
- Arrange the coated chicken pieces in the prepared pan.
- Bake for 20 minutes, then turn each piece over. Bake for another 20 minutes, or until the internal temperature reaches 170°F and the coating is crispy and golden.
