Ingredients:

  • 1/2 cup butter softened
  • 1 cup sugar
  • 4 ounces cream cheese softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 1/2 cups strawberries chopped


Instructions:

  1. Preheat the oven to 350. Grease a loaf pan and line with parchment paper. 
  2. In a large bowl or the bowl of a stand mixer, beat together the butter, sugar and cream cheese until light and fluffy. 
  3. Add the eggs one at a time, mixing well after each addition, then add the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda and salt. 
  5. Add the flour mixture to the butter mixture, and mix just until combined.
  6. Add the buttermilk and stir gently until just combined, being careful not to over mix. Carefully fold in strawberries with a spatula, trying to break them up as little as possible (the batter will be thick). 
  7. Bake 50 to 60 minutes, until the loaf is golden brown and a toothpick inserted in the center of the loaf comes out clean.
