Ingredients:

  • 1 bag Nacho Doritos, crushed
  • 2 cups shredded chicken or ground beef
  • 2 cups shredded cheese (more for topping if desired)
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can Rotel tomatoes, undrained
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 package taco seasoning (adjust to taste)

Instructions:

  1. Prepare the Oven and Dish: Preheat your oven to 350°F (175°C). Spray a 2-quart casserole dish with nonstick cooking spray.
  2. Mix the Filling: In a large bowl, combine shredded chicken or beef, 1 cup cheese, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning. Stir until everything is well blended.
  3. Layer the Casserole: Place half of the crushed Doritos in the bottom of the casserole dish. Top with half of the meat mixture. Repeat layers.
  4. Add Cheese: Optionally, sprinkle additional cheese on top for a cheesy crust.
  5. Bake: Cover with aluminum foil and bake in the preheated oven for 35 minutes. For a larger pan and double recipe, bake for 45 minutes.
  6. Rest and Serve: Remove from oven, let sit for a few minutes, then serve warm.
