Ingredients
- 10–12 oz bag tortilla chips
- 1 pound lean ground beef
- 1 can black beans, drained and rinsed
- 1 can Rotel tomatoes with green chiles
- 1 small onion, chopped
- 1 can cream of chicken soup
- ½ cup water
- 1 package taco seasoning
- 2 cups Cheddar cheese, shredded
- Sour cream and salsa, for garnish
Instructions
Step 1. Preheat the Oven
Preheat your oven to 325°F (160°C). Lightly spray a 9x13-inch baking dish with nonstick cooking spray.
Step 2. Cook the Beef
In a large skillet, brown the ground beef with the chopped onion over medium heat. Drain off any excess grease.
Step 3. Add Flavor
Stir in the black beans, Rotel tomatoes, taco seasoning, cream of chicken soup, and water. Mix until well combined and let it simmer for about 15 minutes to blend the flavors.
Step 4. Layer the Casserole
Spread a layer of lightly crushed tortilla chips at the bottom of the prepared baking dish. Spoon half of the beef mixture over the chips, then sprinkle with half of the Cheddar cheese.
Step 5. Repeat the Layers
Add another layer of crushed tortilla chips, followed by the remaining beef mixture. Top generously with the rest of the shredded cheese.
Step 6. Bake
Cover with aluminum foil and bake for 25–30 minutes, until bubbly and hot throughout. Remove from oven and let it rest for 5 minutes before serving.
Step 7. Serve
Garnish each serving with a dollop of sour cream and a spoonful of salsa. Serve hot and enjoy that irresistible cheesy crunch!
