Cinnamon Swirl Apple Fritter Bread
This Cinnamon Swirl Apple Fritter Bread is a delicious loaf that combines the best parts of an apple fritter and a cinnamon swirl loaf. It features a moist, tender cake studded with bits of apple and a ribbon of cinnamon-sugar, all topped with a sweet glaze. It’s the perfect treat for breakfast, a snack, or dessert.
Ingredients:
- 1/3 cup light brown sugar for the cinnamon swirl
- 1 tsp ground cinnamon
- 2/3 cup white sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 tsp baking powder
- 1/2 cup milk
- 2 large apples, peeled and chopped Granny Smith or Honeycrisp work great
- 2 tbsp white sugar for apples
- 1/2 tsp ground cinnamon for apples
For the glaze optional:
- 1/2 cup powdered sugar
- 2 tbsp milk or cream
Instructions:
1. Preheat Oven:
Preheat your oven to 350F 175C. Grease and flour a 9x5-inch loaf pan.
2. Make the Cinnamon Swirl:
In a small bowl, mix the 1/3 cup brown sugar and 1 tsp cinnamon. Set aside.
3. Prepare the Apple Mixture:
In another bowl, toss the chopped apples with 2 tbsp white sugar and 1/2 tsp cinnamon. Set aside.
4. Mix the Batter:
In a large bowl, cream together the butter and 2/3 cup sugar until light and fluffy.
Beat in the eggs, one at a time, then add the vanilla extract.
In a separate bowl, whisk together the flour and baking powder. Add the flour mixture to the butter mixture, alternating with the milk. Mix until combined.
5. Assemble the Bread:
Pour half of the batter into the prepared loaf pan.
Add half of the apple mixture on top, followed by half of the brown sugar-cinnamon swirl.
Add the remaining batter on top, then finish with the remaining apples and cinnamon swirl. Lightly swirl with a knife.
6. Bake:
Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool for about 10 minutes in the pan, then transfer to a wire rack to cool completely.
7. Make the Glaze optional:
Mix powdered sugar and milk together until smooth. Drizzle over the cooled bread.
