Slow Cooker French Dip Sandwiches

Simply sear the beef, slow cook with flavorful onion soup mix, and serve on crusty rolls with melted cheese and a side of savory au jus for dipping.
Ingredients:
- 2 Tablespoons olive oil
- 2 ½ to 3 pounds beef chuck roast
- Kosher salt
- Freshly ground pepper
- 2 (1-ounce) packages dry onion soup mix
- 2 cups water
- 2 (14.5-ounce) cans beef broth
- 6-8 slices swiss or provolone cheese
- 6-8 crusty rolls (we like ciabatta)
Instructions:
- Sear beef chuck roast in olive oil until browned on all sides.
- Transfer roast and pan juices to slow cooker. Add onion soup mix, water, and beef broth.
- Cook on high for 4-6 hours or low for 8-10 hours.
- Shred roast when tender. Serve on crusty rolls with Swiss cheese and au jus for dipping.
- Broil cheese and top bun until melted and toasted.
