Slow Cooker French Dip Sandwiches

Simply sear the beef, slow cook with flavorful onion soup mix, and serve on crusty rolls with melted cheese and a side of savory au jus for dipping.

Ingredients:

  • 2 Tablespoons olive oil
  • 2 ½ to 3 pounds beef chuck roast
  • Kosher salt
  • Freshly ground pepper
  • 2 (1-ounce) packages dry onion soup mix
  • 2 cups water
  • 2 (14.5-ounce) cans beef broth
  • 6-8 slices swiss or provolone cheese
  • 6-8 crusty rolls (we like ciabatta)

Instructions:

  1. Sear beef chuck roast in olive oil until browned on all sides.
  2. Transfer roast and pan juices to slow cooker. Add onion soup mix, water, and beef broth.
  3. Cook on high for 4-6 hours or low for 8-10 hours.
  4. Shred roast when tender. Serve on crusty rolls with Swiss cheese and au jus for dipping.
  5. Broil cheese and top bun until melted and toasted.
