LAMB SHANK RECIPE

INGREDIENTS :

  • 2 Lamb shank
  • Oil
  • 1 large Onion
  • Half green pepper
  • Half a cup baby carrots
  • Half a cup butter beans 
  • 15ml aniseed
  • 30ml ground cumin
  • 30ml Paprika
  • 30ml Cape Malay curry
  • 15ml white pepper
  • 5ml cloves
  • 15ml soy sauce
  • 30ml tomato paste
  • Salt and pepper
  • 4 cups of water
  • Fresh parsley

METHOD :

  1. Fry onion and green pepper and add all spices
  2. Add lamb shank to the frying mixture and add tomato paste.
  3. Pour in water and soy sauce cover the pot and reduce the heat
  4. Season with salt and pepper then allow to simmer for 3-4 hours or until the lamb is tender.
  5. Add carrots checking on it every 30 minutes or so to ensure the meat hasn't dried out,add more water if necessary...
  6. Remove from heat and add butter beans. 
  7. Garnish with fresh parsley
